Neat Nick Preserves is delighted to announce a brand new collaboration with NoodlesKnows, a healthy food site featuring recipes created by blog author and fitness coach Mandy Kaewsowatana!
Mandy began NoodlesKnows in August 2010, just two years into college and on the heels of a cookbook she wrote and self-published in high school. The blog was a way to begin showcasing new recipes as she developed them.
“Cooking is my art and my passion,” she says. “I am not much of a recipe follower, unless it comes to baking, where precise measurements are required; rather, I love to create on the fly based on the aromas of spices I am using and the flavors I am craving. I love making recipes my own. I get inspiration from recipes in cookbooks or online, but then I mash bits and pieces of them together in my head, add my own flair, and create my own recipes.”
Mandy first met Neat Nick Preserves Founder & CEO Nicole Paterson at local gym Recharge Crossfit, where Mandy works and which carries Neat Nick products. When asked what drew her to developing recipes featuring jams, jellies, and preserves, Mandy replied, “I love all of the Neat Nick preserves flavors I’ve tried so far! My favorites are the Figs & Honey and the Vanilla Bean Pear Jam. I am looking forward to partnering with Neat Nick so I can discover more recipes using preserves. I haven’t used preserves often in the past, but when I have, I’ve used them in desserts (like a trifle or cheesecake) or even fish (pistachio-encrusted with cherry jam) or chicken (chicken and apricot jam).”
What inspired her to begin cooking and developing recipes? It began when she was young and started learning from her father, a proclaimed foodie who worked in catering. He would quiz her about which ingredients went into pancakes or chicken pot pie or turkey stuffing, and her delight in food earned her the family nickname Noodles.
Over the years Mandy has honed her craft, and loves cooking for family and friends. “When I share my tried and true recipes with friends and family, I love seeing them enjoy my creations!,” she says. “I have this one rice salad recipe, which I adapted from a Food Network recipe, that my family adores and asks me to bring to every family gathering. Cooking for others brings me so much joy!”
Her focus on health comes from being a “daily defeater of auto-immune disease”. Diagnosed with Crohn’s disease at an early age, Mandy chooses to eat healthy and delicious foods and to stay active.
